Recipe: Black Bean Dip

20131016_blackbean_1Looking for a fast, easy snack after a long day of work or a quick appetizer to make for a party? This black bean dip will fit the bill. Bonus: It’s healthy, too, and doesn’t require cream cheese or sour cream.

1 plum tomato, diced
2 tablespoons diced red onion
1 tablespoon chopped cilantro, plus sprigs for garnish
2 (15-oz.) cans black beans, drained
1 tablespoon ground cumin
2 teaspoons hot sauce
Salt
Tortilla chips, for dipping

Add the tomato, onion and cilantro into a food processor and pulse until well chopped. Add the black beans, cumin, hot sauce and salt to taste, and pulse until the mixture is mostly smooth.

Scrape into a bowl and garnish with cilantro sprigs. Serve with tortilla chips.
